an excellent example of mountain tea. The

color of the liquor is golden yellow and it

has a pleasant astringency. The aftertaste

lingers for a long time and this, together

with the sweet aroma that you can only

get from mountain teas, is characteristic

of Honyama tea. Since many of the tea

gardens are located on steep slopes, the

terrain is not especially suited for agricul-

ture, making this area unfit for mass pro-

duction. Instead, tea from this region is

valued for its quality. The history is long,

stretching back as far as the Kamakura

period (1185–1333) when Shoichi Kokushi,

a Buddhist monk, brought tea seeds back

from China and planted them in Shizuoka,

purportedly in the village of Ashikubo,

which is part of the Honyama area.

Main cultivars: Yabukita, Okuhikari, Yamakai
